Eggplant in album food

These eggplant were for sale at the Newark, Delaware farmer's market. Eggplant is a strange fruit, usually considered a vegetable, in the nightshade family with peppers, tomatos, and potatos, but quite different from any of those other plants. I enjoy eggplant quite a lot, but I usually only buy them from local sources when they are in season. These are not in season, and are obviously not local.
One of my two favorite ways to cook eggplant both involve slicing them and using oil: either placing both sides in oil and placing herbs and spices on them, and cooking them in an oven or toaster oven, or sauteing them in oil with herbs and spices. I also love baba ghanoush, which is made from eggplant, but I have never attempted to make it myself.
