These fresh, whole squid were for sale for $4.99 a pound at Wan's Seafood in the Reading Terminal Market in Philadelphia. I find this is a fair price for good-quality squid, although I am sometimes able to get them cheaper.

These squid are medium-sized. I have seen both larger and smaller squid for sale in a variety of locations.

Squid are one of my favorite foods. A lot of people remark that they are "gross" or have an undesirable texture. They do have a somewhat rubbery texture, both when raw and cooked, but I find that I have grown to really love their texture. When cooked properly, they are very tender. They are also very easy to cook. I prefer cooking them by tossing them in a cast-iron skillet on very high heat and cooking them for 1-2 minutes, then taking them off immediately. If you let them cook longer, they can become tough.
