This photo shows fish that was labelled as small mountain trout, for sale at Wan's Seafood in the Reading Terminal Market in Philadelphia, for $3.99 a pound. These fish are easy to de-bone and this stand will remove the bone on these particular fish for no extra charge. I don't know what "mountain trout" means, but I asked the people at the stand and they told me that these fish are wild caught from the ocean. This makes me wonder what the labelling "mountain trout" means. I don't recognize what type of fish they are, but I am currently working on an ID...please let me know if you know what they are.

These fish are quite delicious and very easy to prepare. They are best when consumed immediately and do not stay fresh very long even in the refridgerator. They have a very light white flesh, which is slightly coarser and slightly more filling / heavier than rainbow trout, but much finer in texture than Cod; color- and texture-wise somewhere in between those two fish. Their flavor is delightful...it's a mild, clean sort of fish taste.

These "mountain trout" are very versatile. I enjoy baking them and eating them plain, as-is, but I prefer adding (after cooking) a bit of mint or cilantro, lime juice, and hot pepper. My favorite pepper for pairing with this fish is the green long hot pepper.
