Cottage Cheese Salad with Mint and Hot Pepper

This shows a cottage cheese salad that I made as part of a meal which also includes pickled herring (lower left) and whole-grain bread (lower right). It was a hot day when I made this, and I wanted something light, fresh, and cooling. The cottage cheese salad is the main focal point of this meal, so here are the ingredients:
- Cottage cheese, whole milk, small curd
- Diced green long hot pepper. Any green hot pepper would be good; I picked the long hot pepper because of its aroma and its moderate hotness, enough to add some heat but mild enough that I could add a large volume of pepper to the dish.
- Fresh spearmint leaves.
- Ground coriander
It was really really good! I made this particular combination again several times, often with different peppers but always with good results. I also sometimes like to add cucumber, especially when I have access to some of the interesting varieties of cucumber that I have been finding lately at local farmer's markets.
