Blue Potato, Sliced

This photo shows a sliced blue potato; this one is more of a dark purple color. I've actually seen potatos that are more of a deep bluish than this one.
I love these potatos. They have a strong flavor but are otherwise potato-like. These ones had a lumpy texture, which, while it made it a bit harder to clean them, increased their nutritional value, as the skin of a potato contains much more in the way of nutrients than the flesh.
