Shallots

These shallots were for sale at the Newark, Delaware farmer's market. Shallots can be tricky to find, and often expensive, but this market frequently stocks them for a very reasonable price.

I like shallots; their small size is convenient for cooking for one person or small groups, or for adding a small amount to a larger dish without having to store cut onions (which do not keep well). Shallots tend to have a rather strong and rich flavor, but I find it to be less biting than most onions.
