Green Serrano Peppers

These green (unripe) Serrano peppers were for sale in the Newark, Delaware Farmer's Market. The market has an outstanding pepper selection, and is one of the few places I have found that reliably stocks Serrano peppers, which can be hard to find in many parts of the U.S.

A staple of certain regional Mexican cuisines, especially some of the ones that are easier to find in their authentic form in the U.S., the Serrano is several notches up in heat from the Jalapeno, but considerably milder than a Habanero. The aroma of these peppers is fresh and the peppers have a cool quality and a sharp, biting quality to their spiciness. Compared to green Jalapenos, I also find them less sweet.
